DESCRIPTION:On this creative one day fish course\, you will be taken through the skills and techniques necessary to become a proficient fish cook. \n\n\n\nA step by step guide to fish cookery incorporating fish selection\, filleting techniques (round and flat fish)\, but most importantly\, learn a variety of beautiful simple dishes that you can take away and recreate at home with all types of other fish as well. \n\n\n\nCourse Overview \n\n\n\nDuration: 10:00-15:30 \n\n\n\nMaximum student to tutor ratio: 8-1 \n\n\n\nWelcome: Meet your tutors and see for yourself the Philleigh Way farmhouse cookery school and garden. Enjoy a morning tea or coffee and tasty Philleigh Way treat. \n\n\n\nThe Day: The course includes demonstrations and four practical sessions all using local Cornish seafood\, from quick starters to special restaurant standard main courses . All equipment\, aprons\, food and drink is provided including a glass of wine with lunch. \n\n\n\nClose: Have a chat with fellow course attendees and members of the Philleigh Way team. This is a guide to the days activities and may vary depending on the season as well as the group’s interest. \n\n\n\nSample dishes \n\n\n\nSmoked mackerel pate\, homemade bread & chutney \n\n\n\nMegrim sole\, tempura batter and saffron aioli \n\n\n\nGrilled sole\, pancetta\, mussels and braised fennel \n\n\n\nPan roasted hake\, Goan curry potatoes and crispy kale \n\n\n\nPan fried gunard & sauce vierge \n\n\n\nSkills \n\n\n\nIdentifying fish \n\n\n\nSourcing fish \n\n\n\nAssessing quality \n\n\n\nTrimming and filleting flat and round fish \n\n\n\nGrilling flat fish fillets \n\n\n\nBattering  flat fish fillets \n\n\n\nPan and shallow frying \n\n\n\nGriddling \n\n\n\nPlease Note: The last session of the day involves students filleting a large round fish to take home so we recommend bringing a medium sized food container. \n\n\n\nAge suitability: 16+ or 13+ if accompanied by a paying adult. \n\n\n\nCLICK HERE TO BOOK YOUR PLACE
