DESCRIPTION:The humble but mighty pasty\, you cannot come to Cornwall without eating and experiencing a pasty. Enjoy a morning tea or coffee. \n\n\n\nThe Day: The course kicks off with a proper pasty making demonstration that covers the history and culture of the Cornish pasty.  You will then have a go at making your own pasty (meat or vegetarian) with hands on guidance from our tutors – especially during the all important crimping stage! Whilst the pasties are in the oven\, you will enjoy a demonstration of homemade scones. SUMMARY:Woodland Foraging at the Farm
DESCRIPTION:With a mixture of open pasture\, ancient oak woodland and views to the river estuary making Philleigh Way on Court Farm the perfect location to forage for edible plants and wild food.  The course is fun and informative and run by the hugely knowledgeable Emma\, Creator and owner of “Never mind the Burdocks”. (we love the name!!) \n\n\n\nAfter the foraging session\, you will be welcomed back to the cookery school for a delicious lunch and refreshments. What Emma doesn’t know about foraging isn’t worth knowing\, this unique\, highly informative and great day out is sure to kick start any budding wild food lover. \n\n\n\nCourse Overview \n\n\n\nDuration: 10:00-14:30 \n\n\n\nMax student to tutor ratio: 12/1 \n\n\n\nTutor: Emma Gunn – Never mind the burdocks  \n\n\n\nWelcome talk\, orientation and safety briefing \n\n\n\nDuring this session we will cover the aim of the course\, toilet facilities\, course area and safety briefing. \n\n\n\nForaging around Court Farm \n\n\n\nLocated in an ideal environment for a foraging course in Cornwall\, your group will be taken on a foraging excursion around Court Farm\, where you will explore many different environments – including hedgerow\, pasture and woodland. You will learn about the whole wild food larder dealing with herbs\, roots\, shoots\, berries\, flowers\, nuts and fungus. At the end of the foraging course\, you should be able to easily identify a minimum of 15 edible plants that you will be able to forage in your own time. \n\n\n\nLunch  \n\n\n\nYou will then be welcomed into our cookery school kitchen to dine around our big table and enjoy a delicious lunch. SUMMARY:Asado Course
DESCRIPTION:On this Asado BBQ course\, join Rupert (and guests!) as he takes students on an Argentinian grilling odyssey. Lighting fires and grilling meat is a way of life in Argentina from the Glaciers of Tierra del Fuego to the northern peaks of the Andes. \n\n\n\nThe antithesis of South American BBQ\, Asado\, is all about letting the flavour of the meat speak for itself. No spices\, rubs or marinades are added before the meat is touched by the heat of the fire. Very slow cooking over hardwood embers creates the most smokey\, succulent and flavoursome meat you will ever taste. \n\n\n\nUnique equipment is used\, the same as you would see on the Pampas used by the Gauchos after a long day herding cattle\, Parrilla (wood grill)\, Horno de Barro (wood oven)\, Asador Criollo (adjustable spit) to the most primal method Asador de la Cruz in which a whole beast is butterflied\, fastened to an iron cross and cooked over an open fire. You will also learn the correct principles of fire building\, management\, temperature control and charcoal making. \n\n\n\nThe day is all about fire and food…. but more importantly the hunger that inspires us to improvise and innovate.  If there is wood to burn and local ingredients at hand\, then we can find a way to make something delicious!  The course includes plenty of refreshments with the red wine and beers flowing throughout the day! (soft drinks also available) to enjoy with your steaks\, fish and a variety of other meats. \n\n\n\nCOURSE OVERVIEW \n\n\n\nDuration: 10:00am – 16:30pm – If you are able to make it\, you are invited to arrive at 09:00am to help prepare the lamb (Asador de la Cruz method) for hanging over the fire pit for cooking. DESCRIPTION:At Philleigh Way we have reared\, shot\, stalked\, cooked and eaten game in all its various guises for as long as anyone cares to remember.  With a commercial shoot run here at Court Farm that tradition is still very much alive.  Aside from the commercially reared game such as pheasant and partridge\, our fields are teaming with an abundance of wild game including Fallow and Roe deer\, rabbits\, pigeon\, woodcock and snipe.  Philleigh Way truly is the perfect place to learn about game cookery first hand. \n\n\n\nOne of the main benefits of eating game meat is that is it one of the most healthiest meats available\, very low in fat and cholesterol\, game meat is lean\, as they are wild and are able to walk and roam freely so do not store so much fat. \n\n\n\nThe fat that is in game meat is Omega 3.
