For those of you familiar with our Cookery School at Philleigh Way, we now run cookery courses at our other venue, The Cove Cafe in Hayle. Nestled in the cliffs at Riviere Towans, the Cove Café is a tranquil spot to embrace your inner chef, enjoy learning about and preparing fresh food from Cornish producers with an iconic view over the beach. Bringing the Philleigh Way experience to West Cornwall.
A cookery course at the Cove really is a unique experience; yes you’ll learn delicious recipes, useful techniques and eat some of the most amazing food, but it’s really all about immersing yourself in the environment, asking questions and going home with new found confidence.
We will be running a mixture of courses here; choose from Pasties & Cream, Simply Bread or Knife Skills to get your taste-buds jumping and do look out for lots more courses at Philleigh Way Cookery School!
COURSE OVERVIEWS
Pasties & Cream £60
The course kicks off with a proper pasty making demonstration that covers the history and culture of the Cornish pasty. You will then have a go at making your own pasty (meat or vegetarian) with hands on guidance from our tutors – especially during the all important crimping stage! Whilst the pasties are in the oven, you will enjoy a demonstration of homemade scones. Then sit down to enjoy a classic Cornish cream tea before heading home with your freshly baked pasties.
Simply Bread £135
The simplest pleasure.. making bread! At the Cove we can show you how easy and versatile it is. From the gorgeous farmhouse loaf to enriched doughs. We look at variations of dough and bread that can enhance any meal, big or small.
Rupert and guest chefs will take you through the whole process and how the chemistry works in bread making, as well as a few culinary side dishes to prepare alongside your breads. The day is fun, informative and most of all you’ll go home with plenty of spoils from the days baking!

Knife Skills £70
The most important tool in a kitchen… The Knife. So if you are seeking more confidence in cutting and slicing, join us at the Cove where we will look at classic vegetable cuts – julienne, brunoise, paysanne, chiffonade. We will learn how to sharpen & store knives, how to breakdown a chicken and fillet fish. Then we will bring all of these elements together into producing a complete dish!
Being efficient and confident with a knife will change the way you cook!
