Don’t we all want to live until we are 100? Well the Mediterranean diet has long been held in high regard to aiding this and the principal aspects of this diet include proportionally high moderate to high consumption of fish, moderate consumption of dairy products (mostly as cheese and yogurt), moderate wine consumption (my favourite!), and low consumption of non-fish meat products. Olive oil has been studied as a potential health factor for reducing all-cause mortality and the risk of chronic diseases.
So given all these facts I wanted to create an enjoyable course, combining cookery skills and an effective long term approach to eating.
We are blessed with the finest seafood in the world here in Cornwall so this is also a superb fit. The day will consist of useful fish knowledge, whether you are at the Cornish food store or haggling with a local fisherman in Cadgwith. Best ways to cook fish and other great side dishes. But mostly importantly some fantastic recipes that can be used for lunch, brunch or dinner.

Welcome: Meet your tutor and see for yourself the Philleigh Way farmhouse cookery school and garden. Enjoy a morning tea or coffee and tasty Philleigh Way treat.
The Day: The course includes four demonstrations and three practical sessions. All equipment, aprons, food and drink is provided. Of course a few glasses of wine with lunch, it’s the rules!
Close: Have a chat with fellow course attendees and members of the Philleigh Way team before heading home with a bag full of Cornish delicacies prepared by you during the day. This is a guide to the days activities and may vary depending on the season as well as the group’s interest.
